Certified Organic Active Manuka Honey: Manuka is the Maori name for Leptospermum Scoparium, a native tree of New Zealand. Manuka has been used for centuries in traditional folk medicine for treating colds, fevers, healing skin and stomach ailments. Known as the "healing honey of the tea tree", Manuka posseses strong curative properties derived from powerful antibacterial agents and high mineral content. Manuka honey is found only in New Zealand. Certified Organic by Agriquality.

Honey that contains a second type of antibacterial activity in addition to its peroxide activity is called "active". This secondary activity is measured on a scale of 1-20. Honey that tests above 10 is considered active. This secondary antibacterial activity is unaffected by enzymes in the body that destroy the hydrogen peroxide components. It is unaffected by heat, light, or time. Can be effectively diluted without losing its potency.

Certified Organic Thyme Honey: Strong and assertive, this honey is high in antioxidants as well as being "active". Thyme, a member of the mint family, is native to the Mediterranean and was brought to New Zealand by immigrants. Somewhat reminiscent of Rata, Thyme honey has a consistency like very soft taffy and "pull" like caramel topping. Thyme honey is very silky with a full bodied almost maraschino flavor. The flavor has a very long finish. Use sparingly on timid dishes as it can overwhelm less robust flavors. Paired with other assertive flavors this honey will shine.

areas of the Clarence Reserve in the Kaikoura mountain range in

Certified Organic Rata Honey: Produced predominantly from the
Southern Rata on the West coast of New Zealand's South Island.
One of nature's unpredictable flowers, Rata does not bloom
every year which makes harvesting as unpredictable as the
blooming cycle. On the tongue this monofloral raw honey has
a very intense sweet/astringent flavor that quickly melts into a
fine almost silky texture with a praline butter cream finish.
In contrast to the fructose based sweetness of Blue Borage,
Rata honey is glucose based yielding a sublime, nuanced
flavor. Stir well before using. Rata honey will crystallize
